You really love this product, don't you? Back in March, I made an exception to a long-standing rule that we only sell Tim's Holy Guacamole during the summer months, and re-introduced this customer favorite at the New Bo Market.
I was unprepared for the response! We had loyal guacamole lovers drive over to buy this product from Des Moines, Muscatine and gasp; even from out-of-state locales such as Madison, Wisconsin! I guess you might say that's a hint: we've hit the "sweet spot" when it comes to preparing the perfect guacamole!

The avocado was an important part of the Aztec culture centuries before it was discovered by the Europeans. In fact, the Aztec word for the avocado is "ahuacatl" which is roughly translated as "testicle." (Yes, we're blushing too!) Alligator Pear was another name associated to the avocado since it takes on a pear-like shape and appears to have the texture of alligator skins.
The Aztecs so prized the avocado for it's purported aphrodisiac-related properties that the virginal women of the village were prohibited from leaving their huts during the harvest of this luscious vegetable!

Quality is the key! We source our avocados from Uruapan, Michoacan Mexico, which is widely considered the avocado capital of the world. The growing conditions, along with the rich, volcanic soil produce a superb harvest that truly sets our product aside from the many other guacamoles you might enjoy.
We allow the avocados to ripen to perfection in a special room that would make Goldilocks proud....not too hot nor too cold, but "just right!"
So just how fanatic are we about providing you with the freshest, high quality guacamole that money can buy? Well, the alarm clock sounds off at 3 a.m. every Saturday morning and after a quick stop to the coffee pot, I embark to our production facility to start the process of fleshing out the perfectly ripened avocados, chopping the onions, cilantro and tomatoes. The smell of freshly squeezed lime juice never gets old to me. Allowing the limes to ripen to the point where they imbue the most amazing sweet flavor is another secret to guacamole perfection. Lastly, in goes the world famous Maytag Blue Cheese and a generous portion of Rehberg's heirloom bacon. Stir, taste....Ahhhhh - Life is good!
